Week of May 2nd-Mother’s Day Sweets – Riverbend

Fresh Fruit + Cake Cups

Fresh Fruit + Cake Cups

Serves 8

Ingredients

6 cups assorted fresh fruits; cubed cantaloupe or pineapple, sliced strawberries, kiwi, or banana, whole blackberries, blueberries, raspberries

sectioned oranges or tangerines

1/2 cup jam, your favorite flavor

3 cups purchased angel food cake, cut into 1 inch cubes

Let’s Start filling cups!

Preheat oven to broil. Line a sheet pan with foil and spray with cooking spray. Set aside.

1)  Place cubed angel food cake on sheet pan, put in oven and broil 1-2 minutes until lightly browned. Toss cubes to expose other side and broil 1 more minute. Remove from oven and cool on sheet pan.

2) Heat jam over low heat in a small saucepan until warm. Remove from heat and pour into a small pitcher.

3) Create a “Fresh Fruit Bar” by setting out small serving bowls filled with each of the different fruits. Set out wooden skewers so kids can “skewer” fruits of choice. Place fruits inside each cup, drizzle with a little jam syrup, and top with toasted angel food cake croutons.

Makes 12-14

Ingredients

1 ½ cups sushi rice

3 tablespoons canned coconut milk

2 tablespoons light brown sugar

Assorted fresh seasonal fruits

Drizzle

½ cup honey combined with ½ teaspoon ground cinnamon

Let’s Start Rolling!

  • Cook rice according to package directions.
  • Remove cooked rice from heat and place in bowl. Add 3 tablespoons coconut milk, light brown sugar, and ¼ teaspoon ground cinnamon Stir to blend.
  • Cover and store in refrigerator to chill for at least 2 hours or overnight.
  • Remove from refrigerator to assemble sushi rolls. Dampen hands with a splash of water to keep rice from sticking. Take 2 tablespoons of rice and form into a sushi roll with the palms of your hands. Put rolls on serving dish.
  • Top each roll with assorted fruits and drizzle with honey.

A SILLY DESSERT CALLED A“FOOL”!

A silly Dessert called a“Fool”!

iNGREDIENTS

  • 1/2 cup cold heavy cream
  • 1 cup Greek yogurt
  • 1/2 to 3/4 cup jam
  • Garnish: Fresh fruits such as strawberries, raspberries – anything you like

DIRECTIONS

  1. Whisk cream to soft peaks in a large bowl. Fold in yogurt. Spoon jam evenly on top and gently swirl in, leaving streaks. Divide mixture evenly among 4 glasses. Refrigerate for at least 1 hour or, covered, for up to 1 day before serving.

Supplies

2 cups ABC-shaped cereal 

2 cups yogurt-covered mini pretzels

1 cup dried cranberries

1 cup M&M’s Pretzel

1 cup Gummi ABC’s

Mission:

  • Combine all ingredients in a large zip close plastic bag and seal securely. SHAKE!
  • Divide evenly among your super hero friends to figure out the munchies crunchy “Secret Message”
